Artichoke dips can be so yummy, but who wants all that mayonnaise? I don’t, and this actually tastes as good, if not better, than the original.

Ingredients

  • 1 (12-oz) bag or box of chopped frozen spinach, thawed & drained well
  • 1 (14-oz) jar or canned chopped artichoke hearts drained well, about 1.5 cups (NOT marinated)
  • 1 cup plain Greek yogurt
  • 1 cup cottage cheese (4% milkfat)
  • 1 cup shredded mozzarella cheese, shredded
  • 1 cup Gruyère or cheddar cheese, shredded (or some of each)
  • 1/2 cup Romano or Parmesan cheese, grated
  • 1 tsp of crushed garlic or garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 5 - 10 drops of favorite hot sauce

Instructions

  1. Preheat oven to 400 F
  2. Thaw and drain spinach thoroughly. Use a strainer and paper towels to squeeze out the liquid
  3. In a bowl, add artichoke hearts, spinach, yogurt, cottage cheese, most of the cheese (leave some of each for the top), hot sauce, and spices and mix well.
  4. Add mixture to an oven-safe container. Top with the remaining cheese and bake at 400 for about 25 minutes until bubbling.
  5. Broil on low for 1-2 minutes before serving for a golden color.
  6. Serve with veggies or whole grain crackers, and enjoy!

Serving size: 1/4 cup hummus
