Don’t miss making these super easy, seriously delicious Easter eggs that are healthy too! 🐣Dates and peanut butter sort of mimic a caramel flavor. Dip these pitted dates stuffed with peanut butter in melted dark chocolate (or peanut butter shell) to make the magic happen. Then pop them in the freezer. So easy!🐰

Ingredients

  • Pitted dates
  • Dark chocolate chips
  • Coconut oil
  • Natural peanut butter
  • Pure maple syrup or raw honey

Instructions

  1. Use dark chocolate that lists unsweetened chocolate as the first ingredient rather than sugar. I use Ghirardelli 60% Cacao Bittersweet Chocolate Chips but use whatever dark chocolate you want as long as it doesn’t list sugar first.🍫
  2. To melt the chocolate in the microwave, add the chocolate chips in a microwave-safe bowl and add a little coconut oil. Melt the chocolate in 30-second increments, stirring every 30 seconds until melted to avoid burning. 🥥
  3. To make the peanut butter shell for the outer layer or to decorate the chocolate eggs, just start with natural peanut butter and add a little raw honey or pure maple syrup to taste. Warm in the microwave in 30-second increments until coconut oil is melted. Dip stuffed date into the PB mixture and let drip before adding to a lined sheet pan. 🥜
  4. Freeze the dipped dates before decorating the eggs (with a drizzle of chocolate or PB).
  5. Store in the freezer until ready to serve! Enjoy! 💜
