Made this fun Watermelon & Blueberry Caprese Salad for our cookout today! I put this salad together quickly. Just used a small star-shaped cookie cutter to make the fresh mozzarella stars.🌟 I made a balsamic vinaigrette to drizzle over the top just before serving.

Ingredients

Salad

• Watermelon
• Blueberries
• Mozzarella

Balsamic Vinaigrette

• 6 tablespoons EVOO
• 2 tablespoons balsamic vinegar
• 2 teaspoons Dijon mustard
• 1/2 teaspoon Tuscan seasoning (optional)
• Salt & pepper to taste

Instructions

1. Use a small star-shaped cookie cutter to make fresh mozzarella stars.
2. Cut watermelon and add to a bowl. Then added fresh blueberries and fresh mozzarella (stars or pearl-size balls) and top with the stars.
3. Combine balsamic vinaigrette ingredients to make dressing
4. Drizzle balsamic vinaigrette over the top just before serving.
